2020 is the weirdest, most shocking year of them all. And there have been some pretty weird and shocking years.
If you find yourself alone and are still hoping to make a few treats, I recommend these recipes! You can always cut the recipe in half or just stick leftovers in your freezer. Here’s what I’ll be making this Thursday.
Let’s start backwards, because I love dessert:
Healthy Pecan Pie Bars – Erin Lives Whole

Everything about this dessert is perfection. If you’re a fan of the pecan and don’t want the hassle of making an entire pie, make these — you will not be disappointed! Relatively fool proof, gluten free, paleo, and delicious. They are refined sugar free and so much easier than trying to make a pie. I’m going to make the whole recipe and give leftovers to my neighbor who is boy and will eat them all. Don’t delay, they are delightful.
3 Ingredient Paleo Cranberry Sauce – Cook Eat Paleo

I don’t know about you, but I look forward to a great big heaping side of cranberry sauce every Thanksgiving. My brother has never liked it. Neither has my sister. I would always get to take theirs off of their plates or they would even offer it up to me if I gave them extra gravy. But I bet if they had tried this more vibrant and healthier version, they would have fought me for their cranberry rights. What I love about this is how simple it is. Maple, orange juice, cranberry. It’s elegant and easy. I will definitely be making this and eating leftovers throughout the week.
Turkey Cutlets with Pan Gravy – The Nourishing Home

I made a turkey once ten years ago. It was my first foray into Thanksgiving hosting and my immediate family all joined me in Chicago while my roommates were out of town. I learned how to make a turkey, my mom and sister mashed potatoes in the kitchen while singing Christmas songs and drinking Baileys (we’re Jewish haha), and I proceeded to serve the grand bird! And then I discovered afterwards I had forgotten to take the bag of giblets out of the bird. Yay! Since it’s just me this year, I’m going to try this recipe. I couldn’t find a half a breast, but I did manage to find some cutlets. This recipe looks easy as can be and will still give me some leftovers.
Old Fashioned Gluten Free Cornbread – Gluten Free on a Shoestring

Okay, I know cornbread is not paleo, but this version IS gluten-free. If that’s not your thing, pass on by. I used to avoid corn, but I found through trial and error that it really didn’t cause any issues for me. I made this last year to go along with some chili and it was delicious. Plus I have everything on hand already. Annnnnd I might even add some actual pieces of corn into the mix to get all crazy on Thanksgiving.
So these are my choices! I might round this all out and throw a mixed green salad in there to get my veggies or mash some potatoes if I’m really feeling ambitious, but I’m looking forward to this spread and I hope you find something you might like in here too.
2020 might be a difficult year to find any thanks to give, but if you are alive and reading and even thinking of what you want to eat tomorrow, well, we can give thanks for that.
